2 small zucchini
4 orange slices quartered
8 cherry tomatoes
2 tablespoons olive oil
2 teaspoons red wine vinegar
1/2 teaspoon dried basil
Generous pinch of salt and freshly ground pepper
Preheat broiler. Slice zucchini into 1/2-inch pieces. Arrange zucchini alternately on 6-inch skewers with orange quarters and cherry tomatoes. Place skewers on rack set in a broiler pan.
In a small bowl, whisk oil with vinegar, basil, salt and pepper. Brush half the mixture over kabobs.
Place in oven about 4 inches away from broiler. Broil for 2 to 3 minutes. then turn skewers. Brush with remaining oil mixture and continue to broil for 2 to 3 more minutes or until hot. If necessary, turn skewers again and continue broiling for 1 or 2 more minutes. Remove from oven and serve immediately.
